All in Food & Recipes
This past weekend, we experienced an ice storm turning the outdoor elements into a scene resembling the movie "Frozen:. However; Elsa was wrong- the cold DOES bother us! [Especially in April. Spring, where art thou]? Being storm stayed isn't all bad though; cozy days with no where to go are special and rare. Thankfully the hydro stayed on so Dylan and I could do some baking. Not only does it occupy a little kid with cabin fever, but the results were a delicious treat!
Here is a recipe...
Happy Half-Birthday Kyler Jude
An afternoon baby shower fit for a princess.
The trees are vibrant shades of orange, yellow and reds. The air is cool and crisp. Autumn is here and it is magical.
I am so unbelievably blessed to have such a darling little boy. Since the weather is calling for three straight days of rain, I wanted to do something special for him. These clean-eating pancakes fit the bill as they contain his two favourite foods: banana & eggs. They were a hit!
If I could, I would pack my bags and head to the beaches of sunny Mexico! My husband has been there numerous times and raves about the food. I realize my experience of "Mexican" food really fits into the Tex-Mex category, but you can't go wrong with spices, avocado and lime. One of our favourite spins on enchiladas is this Quinoa Enchilada Bake. It's vegetarian and a great Meatless Monday option. Why not give it a try?
Cabin fever has set in! We've been under extreme cold warnings for the past two weeks. Last year the phrase "Polar Vortex" was all the rage; this year "Siberian Air Mass" is making waves. Either way, it is cold up in here!
Warm yourself up with these yummy roasted chickpeas!
If your holidays look anything like ours, you have not one but several Christmas gatherings. With all the feasting, I begin to crave healthy and light dishes. This is my second year bringing this delicious salad to a Christmas dinner. Packed full of greens and roasted sweet potatoes it's nutritious yet festive with pomegranate seeds and feta.
Give it a try! It makes for a great side dish or even a low-key meal in itself.
Tomorrow I am meeting my high school girlfriends for our annual Christmas cookie exchange. I hadn't decided what I was going to bake, but when my baby was up at 3:30 am and then again at 6:00 am this morning- hello 9 month sleep regression- I knew I needed something easy and quick.
I decided to make this "Christmas Crack" introduced to me by my mother-in-law. They require only 4 ingredients and a few minutes to whip up, but WHOA MAMA! They are that good.
Today was a coffee drink'n, teeth'n and crash napp'n kind of day. (Yawn) Being healthy is important to me so that I can live life to the fullest and also set a good example for my family. I find that one of my biggest hindrances to not eating healthy is lack of planning. Therefore, it's necessary that I prepare healthy meals and snacks in advance so that I don't opt for the junky, but all too convenient option.
These overnight oats are packed with nutrition and flavour. It also keeps me feeling fuller longer which is good for the 'ole waistline too! Enjoy!
In this post I am sharing my experience with both Baby Led Weaning and Spoon Feeding.
Check out this delicious Southern Sweet Potato Casserole. It will be a highlight on your table this Thanksgiving!
I made these scrumptious "Pumpkin Cheesecake Muffins" for a church gathering at a cottage yesterday. Unfortunately the weather wasn't warm enough to take a baby... especially a cranky, teething one. It's was one of those days... however; Justin's coworkers Monday just got a little better. I NEED to get these out of the house as they are that good! Trust me.
This treat perfectly encapsulates the taste of autumn with pumpkin, cinnamon, nutmeg, and cloves. Enjoy!
During my son's first six months, I breastfeed him exclusively. On his half birthday...
Today was absolutely beautiful! The air was warm and the leaves displayed vibrant hues of oranges, reds, and yellows. The beginning of autumn is my favourite time of year.
We decided a trip to the Farmer's Market was in order. With bushels of Royal Gala apples for the low cost of $1 (fresh and local woo-hoo!), we decided tonight would be the perfect night to make Apple Crumble.
As it's still technically summer, I'm sharing my mother-in-love aka 'Mama V's' summertime peach cake! Served with vanilla ice cream this makes the perfect dessert... enjoy! xx
